Nostalgic taste – Mum’s Japanese custard pudding

This is my mum’s taste. When I was little, she made this for us when we had special occasions.
Now, when we visit their house, she will cook it for us for dessert.
Last few years, my niece wants to cook it with us. It is exactly same taste through 3 generations.

It’s such a nostalgic taste to me. Simple custard pudding.

This is all you need.
Egg, milk, sugar, vanilla.
My family normally use brawn sugar for all cooking, but mum only use white sugar for this pudding.

First, make caramel sauce with sugar and water only.

Wait until the colour become brown like this.

Then pour water at once.

Pour the caramel sauce into the pudding mould.

Now, pudding part.
Beat the eggs well.

Then warm up the milk. Add sugar.

Once all sugar melted well, then pour all the milk into the egg bowl.

Use strainer and make the liquid smooth.

Repeat few times. Can you see the liquid became smoother?

Add vanilla essence at the end.

Then pour to the mould, which has caramel sauce at the bottom

Then steam it for about 30-40 min with low heat.
(It is depend on the mould size. Adjust it, pls)

Cool it down and serve. Simple light dessert.
